Is made using the loin, its particularity consists in the use of heavy pigs which gives greater softness and more shapes to the flavour.
The process of salting, after the boning, is done with sea salt. After some days, the meat has to be washed, dried and then put inside natural casings, subsequently seasoned in cave.
